INGREDIENTS
- 2 large eggs.
- 100 gm soft brown sugar
- 200 gm unsalted butter
- 100 gm runny honey
- 1½ tbs. strong black coffee
- 200 gm S.R. Flour
- 1 teasp baking powder
- ½ teasp ground cinnamon
- ¼ teasp ground cardamom
- ¼ teasp ground cloves
- 1 tablsp. finely grated orange zest
- 40 gm raisins
- 50 gm chopped dried apricots
- 30 gm chopped walnuts
- A little demerara for sprinkling
METHOD
- Preheat the oven to 150°C Fan
- Line a 900 gm (2lbs) loaf tin with baking parchment
- Put the butter, brown sugar and honey in to a saucepan over low heat. When the sugar has dissolved turn up the heat slightly and let the mixture bubble for one minute.
- Remove from the heat to cool slightly.
- Place the flour, baking powder, zest and spices together in a bowl.
- Beat the eggs and whisk carefully into the butter mixture
- Add the butter mixture to the flour and spices, mix well then fold in the fruit and walnuts.
- Pour into the tin, sprinkle over a little demerara and bake for 40 to 50 minutes or until an inserted skewer comes out clean.
- Leave to cool in the tin for a few minutes then turn out on to a wire cooling rack.
- Serve in slices and add butter for extra deliciousness!
