This was a very quick and economical family meal – Serves 4


Ingredients

1 340g tin of Spam (12 ounces)

 
For the batter:
125g (4½oz) plain flour
pinch of salt
4 fluid ounces of milk,

milk & water OR water.



Method

Bubble and Squeak

Sauté the finely chopped onion in the margarine until soft then add the mashed potato and cooked shredded cabbage. Add a little more marg if necessary and lots of salt and pepper!

During the war, a rocket or landmine dropped at Highbury Corner. I had just left school (at 16 years old), and I was in between starting work and school. My older sister was doing war work at a factory nearby.

At that time we used to meet every day to go to Highbury Corner to have our lunch. As I was just getting interested in cooking, one day I said to her, ‘how would you like to come home for lunch and I’ll cook us spam fritters?’. We were at home eating spam fritters when we would normally be at Highbury Corner, so that saved our lives!
