INGREDIENTS


1 Onion, finely chopped

3 Cloves garlic – pressed

3 Tins chopped tomatoes

170gm Red wine

1 Handful torn basil leaves

1 Tablsp Dried oregano

2 Teasp Mixed Italian herbs

2½ Tablsp Olive oil

1 Tablsp Tomato puree

1 Tablsp Tomato ketchup

1 Teasp sugar

Salt/ Black pepper to taste.




METHOD


Heat the oil in a medium pan and add the onion and garlic. Stir over medium heat for about 4 minutes until soft – do not colour.

Pour in the wine, bring to a simmer and reduce by a half.

Add the tomatoes, basil, oregano, ketchup, purée, sugar and seasoning.

Stir to combine, cover with a lid and simmer for 30 minutes.

Add the mixed herbs and simmer for a further 10 minutes.

The sauce is now ready for use with your chosen recipes.
